An onion tart is always a must in winter

Ingredients :
Cake batter :
- 200g flour
- 0.5 tsp salt
- 75 g butter, in pieces, cold
- 1 dl of water
Filling :
- 40g butter
- 700 g onions, finely chopped
- 4 eggs
- 2 dl of whole cream
- 1 tsp of salt
- a little pepper
- pats of butter
Recipe :
- Mix flour and salt in a bowl. Add the butter, work by hand until you obtain a uniformly lumpy mass. Add the water, quickly bring together into a soft dough without kneading. Flatten the dough, set aside for approx. 30 min covered and refrigerated.
- Heat the butter in a large saucepan. Brown the onions for approx. 15 minutes over medium heat, stirring often, let cool a little. Mix the eggs and cream, salt, pepper, mix with the onions.
- Roll out the dough into a round (Ø approx. 32 cm) on a little flour, place in the mold lined with baking paper. Prick the bottom generously with a fork. Pour the onion mixture, spread the knobs of butter on top.
- Cooking time: approx. 35 min at the very bottom of the oven preheated to 220° C. Remove, let cool a little, unmold.
Additional information:
- Mold: For a sheet metal mold Ø approx. 30cm
- Suggestion: This onion tart is much better warm.
- To save time: use a cake pastry shell (Ø approx. 32 cm).
