Ingredients :
- 1 kg of boiled potatoes (red stripe) from the day before
- 160 g of bacon
- 0.5 teaspoon of salt
- a little pepper
- 3 tablespoons of roasting butter
Recipe :
- Peel the potatoes and pass them through a rösti grater into a large bowl, add the bacon, salt and pepper.
- Heat the roasting butter well in a non-stick pan.
- Add the potatoes, brown for approx. 5 mins, stirring occasionally.
- Shape into a patty using a roasting spatula, do not stir any further.
- Leave to brown for approx. 15 minutes uncovered over medium heat.
- Place a flat plate on the pan, invert the rösti onto the plate.
- Add a little roasting butter to the pan, slide the röstis into it, continue cooking for approx. 10 mins uncovered.

- Accompaniment for 4 people
- Suggestion: Replace the bacon with small diced gendarmes.
- Suggestion: Incorporate grated cheese into the rösti.
