Easy to braid, this bread will earn you compliments!

Ingredients :
- 50 g light spelled flour
- 1.75 teaspoon of salt
- 1.5 dl of water (150 g)
- 350 g light spelled flour
- 100 g whole grain spelled flour
- 1 packet of dry yeast (approx. 7 g)
- 60g butter
- 2 dl of natural buttermilk
- 1 egg
Recipe :
- Brühstück: mix the flour and salt in a large bowl. Bring the water to the boil covered in a saucepan, add to the flour, stirring with the whisks of the mixer, stir until you obtain a thick slurry. Let the brühstück cool, covered, then rest for approx. 24 hours in the refrigerator.
- Mix the two flours and the yeast in a large bowl. Cut the butter into pieces, add with the buttermilk and the brühstück, mix, knead into a soft, smooth dough. Let the dough rise for approx. 1½ hours covered at room temperature.
- Place the dough on a lightly floured work surface, divide into 6 pieces, shape each into a strand of approx. 40cm long.
Shaping :

Arrange the strands on the work surface so as to place three on the right and three on the left, tighten the ends at the top.

Place the strand on the far right in the center and place the second strand on the left on top and to the far right.

Place the strand on the far right in the center and place the second strand on the left on top and to the far right.

Continue braiding according to the same principle, always changing sides.
Tighten the ends. Place the braid on a baking tray lined with baking paper and leave to rise for another approx. 30 mins covered. Preheat the oven to 200° C. Beat the egg, brush the braid with it. Cooking time: approx. 30 min in the lower half of the oven. Remove, let cool a little, leave to cool on a rack.
