Ingredients :
- 8 – 12 elderberry umbels (full flowers – see photo)
- 1 l of boiling water
- 1 kg of sugar
- 20 g of citric acid (sold in drugstores)
Recipe :
- Shake the inflorescences well (do not wash them) to remove impurities and any insects, place them in a salad bowl, pour boiling water over them.
- Add sugar and citric acid, stir well until completely dissolved.
- Cover with a clean cloth and leave to rest for approx. 2 days at room temperature or 4-5 days in the refrigerator.
- Stir occasionally.
- Filter, bring to the boil and pour the still boiling liquid into clean, preheated bottles.
Carafe of syrup:
- Dissolve the syrup in water, add the lemon slices and the umbel.
