Vacherin Fribourgeois, a cheese for many occasions.

Ingredients :
- 1 tablespoon of butter
- 100 g floury potatoes, finely diced
- 4.5 dl of vegetable broth
- 1.5 dl of white wine (e.g. Epesses)
- 250 g of Friborg Vacherin cheese, finely diced
- salt, pepper, to taste
Recipe :
- Heat the butter, brown the potatoes. Pour in the broth, let the potatoes cook for approx. 15 min covered while keeping crunchy.
- Add the wine, let it bubble gently for approx. 5 minutes.
- Add the cheese, blend the soup finely, divide into bowls.

Vacherin Fribourgeois has benefited from the AOC label since November 2006. Milk production, manufacturing and refining of the cheese must take place in the canton of Friborg as well as in the municipalities of Claveleyres and Villars-les-Moines.
