Ingredients :
- 600 g of boneless deer or roe deer or wild boar meat
- 250 g of ham
- 200 g of bacon
- 1 large apple
- 1 onion
- 4 to 5 tablespoons of rapeseed oil
- 200 g of chicken livers
- 100g mushrooms
- 1 dl of cream
- 1 dl of white wine or
- 1/2 dl of Madeira and 1/2 of cognac
- Salt pepper, paprika
- Thyme and marjoram
- 200 g bacon strips
Recipe :
- Dice the meat, ham, bacon and onion.
- Add the apple cut into strips.
- Heat the oil in a pan and brown all these ingredients then the chicken livers and the mushrooms cut into pieces.
- Blend everything and leave to rest in the refrigerator.
- In a bowl, mix the cream, white wine or Madeira/cognac and spices.
- Salt and pepper.
- Add this mixture to the stuffing.
- Garnish your mold with bacon strips and pour in the stuffing.
- Pack the mold and bake for an hour in a bain-marie oven at 180°.
