Ingredients :
Pears in red wine:
- 5 dl of full-bodied red wine, for example Merlot
- 100 g of sugar
- 3 cloves
- 1 stick of cinnamon
- 6 pears
Röstis :
- 1.2 kg floury potatoes
- 4 tablespoons of rapeseed oil
- 200 g of bacon
- salt, pepper
Recipe :
Preparation of the pears:
- Prepare 1 day in advance so that the color sets well.
- Peel, cut in half, core.
- Bring the wine, sugar and spices to the boil, then poach the pears over low heat, keeping them crunchy.
- Reserve in the wine until needed.
Preparation of rösti:
- Cook the potatoes in their jackets the day before.
- Peel, pass through a rösti grater.
- Spread on a baking sheet previously lined with parchment paper.
- Sprinkle with bacon, drizzle with oil, salt and pepper.
- Cook for 30 minutes in a hot air oven at 200°C
