Ingredients :
Meat :
- 560 g of Jorat wild boar loin

- 80 g of bacon
- 80 g fresh button mushrooms
- 80 g blanched spring onions
Recipe :
Meat :
- Cut the loin into strips.
- Heat the oil and brown the meat on all sides.
- Season with salt and pepper.
- Sprinkle with flour, mix.
- Deglaze with red wine and reduce to a syrupy consistency.
- Add the broth and simmer for 25 to 35 minutes over low heat.
Filling :
- Heat the butter in a pan.
- Add the bacon, mix.
- Cut the bread into small cubes, add, sauté.
- Cut the mushrooms into strips, add.
- Add the onions, mix everything.
