The delicious fall recipe

Ingredients :
- 12 slices of stale bread
- Butter or herb butter for spreading
- 800 g mixed mushrooms (button mushrooms, oyster mushrooms, chanterelles, boletus, for example) cleaned, cut into strips
- Butter or cream for roasting
- 1 finely chopped shallot
- 1 clove of garlic
- 1 dl of white wine or vegetable stock
- 2 dl of vegetable broth
- 2.5 dl of half-cream for sauces
- 2 tablespoons finely chopped marjoram
- salt, pepper
- a few drops of lemon juice
- marjoram to decorate
Recipe :
- Spread the butter on the slices of bread, place them on the baking sheet lined with parchment paper.
- Grill for 3-5 minutes in the top of an oven preheated to 220°C.
Sauce :
- Sear the mushrooms in portions in the roasting butter, remove from the pan.
- Brown the shallot and garlic.
- Add the wine or stock, reduce slightly.
- Add the stock and the half-cream for sauces, reduce until smooth.
- Add the mushrooms and marjoram, simmer briefly, add salt and pepper and adjust the seasoning with lemon juice.
- Arrange the slices of bread on plates, spread the sauce on top, decorate.
Additional information:
You can choose your mushrooms (morels, boletus, chanterelles, mix…). Replace fresh mushrooms with dried mushrooms. 100 g of fresh mushrooms correspond to 10 g of dried mushrooms. Soften and drain according to package directions.
