Vaudois sausages on a bed of lentils, a marvel!

Ingredients :
- 1 tablespoon of oil
- 1 onion, finely chopped
- 200 g carrots, diced
- 250 g brown lentils
- 5 dl of water
- 2 Vaudois sausages (approx. 300g)
- 1 dl of white wine (e.g. La Côte)
- 0.25 teaspoons of salt
- a little pepper
Recipe :
- Heat the oil. Brown the onion and carrots, add the lentils, simmer briefly.
- Add the water, bring to the boil, reduce the heat, place the sausages on the lentils. Leave to cook for approx. 30 min covered over a low heat.
- Add the wine, continue cooking for approximately 15 minutes.
- Prick the underside of the sausages with the tip of a knife so that the juice runs onto the lentils. Be careful of splashes when you prick the sausage.
- Remove the sausages, cut into slices.
- Salt and pepper the lentils (not the sausage), serve with the sausage slices.
Presentation :
Arrange the lentils and carrots on a hot dish and place the sausage on top after having sliced it into rounds. The sausage goes perfectly with a touch of mustard.
