The real swiss ski slope soup

Quantity: 4-6 people
Ingredients :
- 50 g grated Swiss Gruyère AOP per person
- 900 g peeled potatoes, cut into small cubes
- 300 g peeled carrots, cut into slices
- 300 g kohlrabi, peeled and cut into slices
- 100 g spinach, cut into large strips
- 400 g leeks cut into slices
- 300 g green beans cut into 3 cm long pieces
- Salt, pepper
- 1.5 liters of water
- 6 dl of milk
- 2 meat stock cubes
- 200 g cooked cornettes (pasta)
- 2 bunches of chopped parsley and chopped chives
- 2 cups of cream
Recipe :
- Bring the vegetables, salt and pepper to the boil in 1.5 liters of water then simmer for 20 minutes over medium heat.
- Add the milk and stock cubes and simmer for another 20 minutes.
- Shortly before the end of cooking, add the cornets, herbs and cream.
- Arrange in a preheated soup bowl and generously sprinkle each plate with Swiss Gruyère AOP.
